Most metal food cans are lined with an epoxy coating to prevent corrosion, and that lining leaches bisphenol A (BPA), an endocrine-disrupting chemical, into the food. In a randomized trial, people who ate canned soup daily for five days showed a 1,221 percent rise in urinary BPA compared with the same people eating fresh soup. Many brands have moved to BPA-free linings, but the common replacements like BPS are less studied and structurally similar.
